This batter can have orange or lemon zest added for extra flavor. These tea cakes take a short time in the oven so make sure to set the timer. Once they are baked, remove from the oven and let them cool for 15 minutes. Once they have cooled, simply take a butter knife or fork and gently slide into the depression, next to the tea cake and pull up. Your sea shell shaped cookies will be ready to be enjoyed. Clean up of the Madeleine pans is easy. Use a non-metal brush a scrub gently with hot water. DO NOT use soap and DO NOT put in your dishwasher. This will ruin your Madeleine pans!
