recipe: “When French Women Cook” by Madeleine Kamman 1 cup all-purpose flour 1/2 cup buckwheat flour 1/2 cup sugar 4 eggs 3/4 tea. salt 1 cup milk 2 cups water 1 tea. brandy 1/4 cup melted unsalted butter (melt in the crepe pan) Mix flours and sugar. Add eggs and salt, mix. Gradually add milk and water, stir until smooth. Add brandy. Stir in melted butter. Let stand 20 minutes. Stir before making each crepe. Ladle the batter into the lip of the pan, swirl to cover the bottom of the pan. Cook for 1 minute until brown and lacy. Flip the crepe with fingers and fork. Cook for another minute. It takes less than 30 minutes to enjoy this French butter cake. ** Please expand ** Madeleine is a classic French butter cake rom Lorraine region of France. I learned how to make madeleines in the basic course of Le Cordon Bleu Paris. If you refrigerate your batter for one hour before filling the molds, it will be exactly the same recipe of LCB. But I wanted madeleines in no time, so I chose the shortcut. Here are three characteristics of my madeleine recipe: 1. You don’t have to incorporate air into the egg mixture because baking powder will do the job. Cordon blue way. 2. The madeleine pan in the freezer for 3 mintues. Pas plus. 3. No butter and no flour on the non-stick pan. Why bother, if the madeleines come out clean anyway? I make madeleines regularly but never buttered and floured my pan. FYI, if you incorporate air (according to other recipes), then you should butter and flour. Not for my recipe.
